Chinova Bioworks Is Preserving Your Food with Mushrooms
Founded by a UNB biochemistry grad, the Fredericton company extracts chitosan from white button mushrooms to replace artificial preservatives — and has raised over $8M doing it.

The clean-label movement has a problem it doesn't like to discuss: take the artificial preservatives out of a drink or a dairy product and spoilage takes them back. Chinova Bioworks of Fredericton sells the way out — a natural preservative extracted from mushrooms.
The science
Chinova's flagship ingredient, Chiber, is chitosan derived from white button mushrooms: a natural fiber with broad antimicrobial properties that protects food and beverages against yeast, mold, and bacteria. For brands, the label reads like an ingredient, not a chemistry set — which is the entire commercial point.
The company
Chinova was founded in 2016 by Natasha Dhayagude — a University of New Brunswick biochemistry graduate — with co-founders David Brown and Dr. Tanzania Huq. The investor list is unusually blue-chip for an Atlantic Canadian foodtech: a $2.6-million seed round co-led by DSM Venturing and Rhapsody Venture Partners with AgFunder and Natural Products Canada participating, followed by a US$6-million Series A co-led by the same firms in 2022 to scale production. Total funding sits above $8 million.
When one of the world's largest nutrition-ingredient companies co-leads two consecutive rounds, it isn't charity — it's a supply-chain scouting report.
The pattern
Chinova rounds out a New Brunswick bioscience thread that runs through LuminUltra's water microbiology and the province's agtech bench: applied biology, unglamorous markets, global customers. Fredericton's mushroom-fiber moment may read as a novelty headline; the cap table says otherwise.
